Costa Rica, like Nicaragua, has it's vegan national dish "gallo pinto" - mix of rice and beans with spices. Here it's called simply "pinto" and could be found in any cheap eatery around the market, but it may be harder to find pinto without additional eggs there. Fried bananas ("platanos") are also popular. Like in every country of Central America you can find "frijoles refritos" (refried beans) in supermarkets and tortillas in the streets - this will save you money in this expensive country.
