India is a great place for vegetarians. For vegans things are not so easy as a lot of food is prepared with dairy such as ghee. In general it helps to state that you're "pure veg", which already means vegetarian and no eggs. If you want to avoid dairy you'll have to state this and be very clear about it, and possibly repeat your statement 4 times or so (as things go in India).
