Isinglass is a substance obtained from the dried air bladders of fish, used in food processing.

Although very little isinglass remains in the ready food or drink when it is consumed, many vegetarians consider food that are processed with these fining not to be unsuitable for vegetarians.

Uses

It is a form of collagen used mainly for the clarification or fining of some beer, wine and vinegar.
