Spain is more vegan friendly than one would expect at first thought (or sight). Tapas places are usually quite flexible and sometimes even let you add your own veggies to whatever they served you - and since it's so "compartmentalized" you can often order only olives. Generally be careful to specify what you don't eat, even bacon ("jamón") and chicken ("pollo") are sometimes not considered "meat".

Barcelona and Madrid are slightly easier than most places and you can even find vegan restaurants these days.
