Cake is a dessert that is traditionally made out of flour, sugar, eggs and butter or oil. Even though the majority of cakes sold in shops and bakeries are not vegan (unless they are accidentally vegan), it is not difficult to make one at home. Vegan restaurants also usually have several types of cakes on their menu.
Vegan chocolate cake is very easy. Here is one of the simplest.
Very simple vegan cake can be made out of flour, sugar, oil and backing powder. More complicated ones use all kinds of extra ingredients, such as cocoa, vanilla, spices, seeds, nuts, berries, tofu, etc.
- 1 mug of self raising flour
- 1/4 mug of oil
- 1/2 mug of soya/rice/almond or coconut milk
- 1/2 mug of sugar
- 1/4 mug of dairy-free drinking chocolate powder
- juice of 1/2 lime
- zest of an orange
- pinch of cinnamon
- pinch of sea salt
- (optional healthy option) tablespoon of chia seeds (for omega-3)
Mix together and cook in an oven a cake tin at 175 C for about 25-30 minutes. Check inside if it is cooked with cocktail stick (if comes out clean it's done) To make deep cake make 3 layers or you can pour mix into cupcake cases but then cook for 30% less time, e.g. about 15-20 minutes.
